All fruits contain some natural acids, which being soluble in water form part of any juice that is extracted from the fruit. The well known ‘bite’ or ‘tang’ of an acidic product lends character as part of the overall enjoyment of consuming fruit juices.The level of acidity varies from the almost negligible in such juices as Pear, Grape and Tomato to extremes in juices such as Blackcurrant, Passion fruit, Lemon and Lime. Using the universal indication , the juice of black currants would make the paper red.
