Cow tongue needs only to be boiled. Cover with water, add a couple stalks of celery, chopped, about half a onion chopped. Boil for two to three hours depending on size. When juices run clear after being poked with a fork it is ready. Let cool for about 15 minutes, then peel off the thick hide covering. It makes great sandwiches on toasted bread.
