Why do dogs only poop in one room and not the others?

Dogs are extrememly smell-oriented. Once their scent has marked a spot, they think of it as "their territory" and will return to it again and again. This is even true of dogs who remain outdoors; they will make a habit of eliminating in a particular area of their enclosure.
