Why does wood crack after turning?

Because by removing material from the piece of wood, you have allowed it to release internal pressure. Most commercially available wood has been kiln-dried to achieve a 20 year old level of stability. I suggest that you allow the woods you use to age longer before you use them, or accelerate the aging process.
