To cook spare ribs on a smoker, first prepare the ribs by removing the membrane from the back and applying a dry rub of your choice, letting them sit for at least an hour. Preheat the smoker to around 225°F (107°C) and place the ribs bone side down, ideally using indirect heat. Smoke the ribs for about 4-6 hours, spritzing them with Apple juice or a vinegar mixture every hour for moisture. For added tenderness, wrap the ribs in foil for the last hour, then finish by glazing with barbecue sauce and smoking for an additional 30 minutes.
