Why would there be a strong chemical reaction when coca cola and mint are mixed together?

It is a physical reaction, not chemical when MENTOS are placed in carbonated soda. The ingredients in the candies cause the dissolved carbon dioxide in the soda to be all released at one time. The result is intense foaming- but no chemical reaction.
