How is Fermentation symbolic of corruption in Leviticus?

As fermentation soured dough and fruit, the symbolism of leaven was used to represent evil and corruption in a spiritual sense. Unleavened bread and Grape Juice were used as symbols of purity. Alcoholic wine was forbidden to the priests.
