How do you answer 'How will you handle a situation that requires you to do a number of things at the same time' in a job interview?

First, you answer honestly as this question is probably being used to determine if you can multi-task. When I ask this question, I am trying to determine if the person has a "one track mind" or will be able to do several things at once. Perhaps give examples of previous employment experiences which required you to do more than one thing at a time - two or three should be sufficient.
