From researching the properties of Bismuth, I saw that it is noted for being a brittle element. SWords are intentionally designed to have at least some flexibility so that the sWord can spring back from sudden impacts, which is where a Bismuth sWord would catastrophically fail. Additionally, bismuth may not be able to hold a sharp edge for very long either due to how brittle it is.
