Have you tried buying her some? She might feel obligated to wear them and then open back up the possibility of other boots.

Or, as option two:

Your girlfriend has found out that you apparently like boots. So she won't wear boots. And you're still calling her your girlfriend.

Dump her, and find a girl who's willing to wear nothing BUT boots (I don't mean that literally, but then again, if the idea appeals to you, why not?).
