To roast a whole butternut squash, first preheat the oven to 400F. Wash the squash, then pierce it with a fork in a few places. Place the whole squash on a baking sheet and roast for about 45-60 minutes, or until it is tender when pierced with a knife. Let it cool slightly, then cut it in half, scoop out the seeds, and scoop out the flesh to use in recipes.
