How does animal glue set?

Animal glue sets through a process called cooling and evaporation. When heated, the collagen proteins in animal hide dissolve to form a viscous adhesive. As the glue cools, the proteins reconfigure and bond together, creating a solid structure. Additionally, as moisture evaporates from the glue, it further hardens, leading to a strong bond between surfaces.
