How did lamintons get their name?

Lamingtons are named after Lord Lamington, who was the Governor of Queensland, Australia, in the early 1900s. According to popular lore, the treat was created by a chef at the governor's residence when he accidentally spilled chocolate on some leftover sponge cake and rolled it in coconut. The delightful result became associated with the governor's name, leading to the confection being known as lamingtons.
