How do you take the carbs off a 1982 Honda Goldwing GL1100?

Take spark plug wires off after you number them. then unbolt the two tubes per side from the head.

It is a tight fit but you start with taking the bolts loose that hold the carburetor throat to cylender heads, four bolts on each side of engine.

Carefully slide carburetor out the left side of engine just far enough to loosen the throttle and choke cable. after cables are removed finish sliding carburaturs out left side of engine, be careful not to damage the o ring gasket under each tube as you remove carburators.

Carburators will not come out right side of engine.

It is a fairly easy task but it is best to buy new o ring gaskets when you start back with carburetor, good luck.
