Will parrot fish eggs hatch

No, a parrot fish is a hybrid (similar to a mule). Both male and females are born infertile. I have seen several posts on fish sites from people stating that they did indeed have parrot fish fry that have hatched. Some are born fertile, as well as at some fish farms they inject the males with hormones, so it is not really known as far as the odds, but it is a possibilty.
