Roman Catholic Answer:

The Church Fathers usually refers to those teachers of the first twelve, but especially the first six centuries who added notable holiness and complete orthodoxy to their great learning so this would be beginning with St. Clement of Rome. It would not include St. Thomas Aquinas who died in the late 13th century.
