I'm Presbyterian. We (and I believe most protestants) believe that all Christians are saints. Check out Paul's letters. He uses the term "saint" over and over again to address the early Christians, while not once calling them Christians! So to answer your question, no not all saints are martyrs.

I'm not terribly familiar with the canonized saints of the Catholic faith, but I can think of several of them who weren't martyred. Notably Mary and Joseph.

I am Catholic, so I will share what my theology has taught me. Some saints, such as Saint Lucy or Perpetua and Felicity are martyrs because they were killed because of their faith. Not all saints are martyrs, however. The requirements to be a saint is that 2 miracles must be attributed to your interceding to either heal or create a divine sign. So it is possible to be a saint and not be a martyr.
