The Word Monday is a proper singular noun. It requires no apostrophe.

I have a test on Monday.


If the Word Monday has a possession or belonging, it needs an apostrophe.

Monday's deadline was coming too soon.

No one looked forward to Monday's schedule.


Note: Mondays, plural, would be Mondays' as the possessive.
