Why wont freshwater plants survive in my aquarium at the shop they told me to just put them in and they will live off fish waste why are they dying out?

The freshwater plants you have taken from the shop and put directly in your tank may be dying out due to the water being too cold, too warm, getting too much or too little sunlight, or too much or too little oxygen in the water. There are many things a plant needs to survive.
