Does a 2000 Yamaha grizzly 600 have a low oil shut off?

No. Check oil level by removing left cover (3 bolts, 10mm socket), and look at the oil level window behind the forward oil cooler tube. The oil level should be between the upper 3 marks and the lower 3 marks.
