Why are carburetors still used in drag cars and muscle cars?

Carburetors provide a perfect, stable fuel/air mixture at full throttle. Decades of development have gone into fuel jets, intake manifolds and all the other details required for carburetors in high performance engines. And tweaking them can be achieved with simple mechanical changes.
The usual advantages of fuel injection don't apply here: cold weather starting, dynamic adjustment of parameters while driving.
Eventually, fuel injection will replace carburetors as a new generation of mechanics come of age who are more comfortable changing computer settings. But it will take them years to invent all the tricks that the current top fuel mechanics already have for their carburetors.
