Why did cowboys wear high leather boots?

In the sort of territory they worked and lived there was a distinct ad vantage in having the protection of higher boots against grass nettles and rocky terrain not to mention protection against creatures scorpions and snakes. A trip to the doctor was a lot harder then so more care had to be taken.
