What is the Mexican drink Elote made of?

Elote is not a drink at all: it is corn on the cob, boiled in the husk. Sometimes, it is presented "on a stick", but may also be presented with the husk pulled down and used as a handle. Another custom is to cut the kernels and present it in a bowl: this method is often called esquites in central and southern Mexico.
