Is it DU champignons or DE champignons?

Most probably "de". It could be both, but not with the same meaning:

Nous avons mangé un plat de champignons (we ate a plateful of mushroom) (or plural: nous avons mangé DES champignons au diner: we ate mushrooms at dinner)

- tu as vu la taille du champignon ? (did you see the size of the/that mushroom?)

- nous avons mangé une partie du champignon (we ate part of the mushroom)
