Why are gourmet servings so small?

Gourmet it's meant to be the joint factor of the best ingredients with the best preparation possible.

Now, I know that the small size is the drawback (along with the price) but it's small so you don't get sick of it, regular restaurants usually give you enough food to stuff you, gourmet is more of a minimalistic art that you eat and crave for.
